No intro, right to the thoughts today. Thanks, Amanda!
1. I don’t remember ever having such a bad reaction to pollen. Either I eliminated it from memory or this season is out of control. I’ve had a killer headache for the better part of 2 weeks and the only things that help are sleep and ice packs on my head. Oh, I guess Claritin, to an extent. Ok, complaints of the day are done.
2. In an effort to eat for optimal gut health (more on that soon), I’ve added more fermented foods to my diet. I drink kombucha regularly but recently starting having about a tablespoon of sauerkraut with breakfast. It is an acquired taste so I’m surprised that I like it. My breakfasts lately would seriously make my 7-year-old Life-cereal-eating-self cringe.
3. Please tell me you watched the NCAA Finals game on Monday? To no one’s surprise, I fell asleep with about 5 minutes to go in the game so I missed the seeing the beyond-spectacular ending live. I get chills watching the replays.
4. On the other hand, my dad went to the game in Houston and all I got was this lousy hat. I’ve always wanted to say that. And the hat isn’t really lousy…
5. One more sports topic…UCONN Women’s Basketball. I don’t care if you hate sports, these women are freaking awesome and deserve all the respect. 4 championships in a row. A dynasty.
6. You all know my love of the spiralizer…it’s clear in most of my food posts and recipes (zoodles, coodles and swoodles, duh!). I’ve been wanting to add to my repertoire of spiralized-foods, so this week I made turnip and jicama noodles. Toodles and joodles? Both were surprisingly easy to spiralize (much easier than sweet potatoes) and look almost identical as noodles.
It must have been my first time trying turnips because it was definitely a new-to-me taste. More cabbage-like. I sautéed them with coconut milk, salt and pepper.
The jicama noodles were crunchy, like jicama, obviously. Once softened in the pan they were a really good dinner side and salad topping. Along with sautéing the noodles I made two jicama tortillas/fritters in the Panini press. My fellow health-foodie cousin texted me saying I needed to make these and she was right :) Next time I’ll make them larger so I can actually stuff and top them with things.
7. On a completely different note, I have a half marathon this weekend. I’m an ambassador for the Iron Girl Clearwater Half Marathon and I’m (mostly) ready to run. I need to make a new playlist on Spotify so any music suggestions you have are greatly appreciated. Current favorite song: Work From Home

Okay you know I’m not much of a sportsgirl, but I am with you on the UCONN women’s basketball team because they are amazing and womens basketball is about all I’ll watch! I also LOVE that you spiralized jicama! That’s such a great idea. The only thing I usually do with it is make home fries, which is really good but I want to do more!
Margaret @ youngandrungry recently posted…Y&R Spring Running Must-Have’s
Oh making fries out of jicama is a great idea! I’ve been on a parsnip fry kick lately.
1. Pollen is affecting me SO BAD this year out of no where I seriously have used like 10 Kleenex boxes. 2. WORK FROM HOME IS MY FAVE SONG I CAN’T STOP LISTENING

Did they write that song about you? ;) I love it!

Love all your noodles! And love jicama so need to get that at the store next time. Sauerkraut and kimchi were in a lot of my meals last summer so have to do that again as well :)

I just went back to the store today to get more jicama because it came out so well! A good variation for a salad topping too.
Brie @ Lean, Clean, & Brie says
I hated breakfast foods as a kid so I ate the most random things like soup and sandwiches. My mom still wanted me to eat breakfast every morning, which I am happy she instilled that habit in me, so even if I wanted something completely random she was good with it. GOOD LUCK on your half marathon this weekend!!

Brie! I was the exact same way! I went through a few months where I heated up Tyson spicy chicken buffalo wings for breakfast without fail, every morning. I was a strange kid.
GOOD LUCK EMILY! Your’e going to rock the half marathon!

I remember your post about hating breakfast foods as a kid! My sister was kind of like that…although I don’t think she hated it as much as she liked sandwiches and lunch foods.
How do you get to be an ambassador for a race? That sounds super fun!

I saw them advertising for it last year and thought it would be a perfect fit! It’s near my house and the timing worked out well :)
Susie @ Suzlyfe says
I would eat jicama like an apple if I could, haha. Now I have higher ambitions for jicama. Great idea!
Susie @ Suzlyfe recently posted…Currently… April 2016
Haha it’s so good! I saved some whole for a “traditional” salad topping but I liked the noodles on salads too.

I loved that NYT article and actually thought of you and some other bloggers when reading it! Mostly I’m always interested in how lots of generations past have taken time to find their way, when everyone complains it’s just a millennial problem.

It was so calming to read because, even though I know I’m not alone in this, it often feels like it.
I LOVE sauerkraut. I’m a big fan of anything fermented. GOOD LUCK (not that you need it) at your half!!!
You’re sweet, thanks Sami!
Gretchen | Gretchruns says
I LOVE sauerkraut! I just got a big jar of it along with red cabbage….so good. I’ve been having it with brautwurst for dinner this week and I’m obsessed! Hope you learn to like it :)

I’m liking it so far but I think I’d prefer it on something like a sausage or burger. But mixed in with my hash in the morning isn’t bad!
Your Jicama noodles are so pretty! I know that a great deal has been happening in basketball lately, but I’ve been so oblivious. I hope your half marathon goes SUPER WELL! I love fermented foods except for Kimchi.

I’ve never tried kimchi but I’d be surprised if I liked it! Thanks, Em! :)

Omgosh I gotta get me some toodles and joodles – I think I have an 8 year old’s brain because I seriously think that’s the funniest thing ever. But now I wanna bust out my spiralizer and get more creative.

No, I do too. I think the names make me more excited than anything!
Amanda @ ExploringLifeAndThings says
My family is huuuuge into sauerkraut and even make their own but I’ve never been a fan. I think it’s just the smell that I don’t like? Haha. Oh gosh, breakfast as a kid was always cereal, poptarts or those toaster strudel things.. aka all the sugar haha.
Good luck in your half marathon!!

It definitely has a weird smell (and taste) so I understand not liking it. But cool that your family makes it! Thanks, Amanda :)

My favorite breakfast as a kid was definitely cereal of mini donut holes. My mom used to have tons of different cereals on deck like Cocoa Pebbles, Fruity Pebbles, Cheerios, and my favorite, Honey Bunches of Oats! I haven’t tried too many fermented foods but I do enjoy sauerkraut on burgers, hot dogs, or sandwiches. Good luck at your half marathon this weekend! You are going to crush it!
Kellen McAvoy recently posted…When You’re Craving Something Crunchy
My dad and sister could have Honey Bunches of Oats every day for breakfast and not be mad. It’s a staple in our house. Thanks, Kellen!
So excited for your half!! I am so amazed and inspired by you and your running! My favorite workout songs right now (Aside from work from home… SO catchy) are Unstoppable by Sia, Cheap Thrills by Sia, and sHe by Zayn. Let me know if any make it on the playlist :)
Also – I’ve been thinking about investing in a real spiralizer instead of a vegetti… Thoughts?
B! THANK YOU for those songs! Adding them right now.
And I don’t know much about a vegetti but I totally think you should get a real spiralizer. I got my money’s worth after the first month of using it. It’s a kitchen staple now!
Ellen @ My Uncommon Everyday says
Love that NYT article and it feels so relevant to my life right now. Honestly, up until college (and even to the choosing my major part), I was the definition of a Sprinter. Now, who knows?? Your noodles make me so happy and I’m insanely excited to bust out my Inspiralizer when I get back home this summer. Good luck on the half this weekend! I’m sure you’ll kill it :0

I bookmarked the article to refer back to because it felt so relevant too! I’m the same way…who know really what I am now. You will LOVE the spiralizer! I use mine every day.
Gahh allergies… I used to get them when I loved in Connecticut but now in Florida.. No more! Speaking of Connecticut.. thanks for the UConn women’s basketball shoutout.. I went to UConn and I am a HUGE fan! :-D
What a great idea to spiralize jicama!! I’ll have to try..

Oddly enough, as a kid I rarely ate breakfast – or if I did it was a couple of bites of toast and that was it. I don’t know how I did it as these days I wake up HUNNNNNNNGRRRRRRRRRRRYYYYYYY and breakfast is my favourite meal of the day – so I totally don’t understand non-breakfast eaters :P
I never ever liked cereal though and still don’t – unless it’s on top of yogurt or cottage cheese as soggy cereal is not my jam!
Good luck with the race, gorgeous! <3 xo

I’ve been thinking about investing in a spiralizer…you may have just solidified my decision!
I usually didn’t eat breakfast as a kid, but the times that I did, I loved eggo waffles or cinnamon toast. My mom knew how to make it just right.
I’ve never had saukraut, but my mom hates it, so she’s kind of scared me away from it, lol.
I hope your allergies get better – Claritin never works for me, btu Zyrtec does wonders!
I’ve never had sauerkraut before! My family really likes it though… Is it like pickles? Sorry if that’s a weird questions, haha ;)
