1. I don’t remember ever having such a bad reaction to pollen. Either I eliminated it from memory or this season is out of control. I’ve had a killer headache for the better part of 2 weeks and the only things that help are sleep and ice packs on my head. Oh, I guess Claritin, to an extent. Ok, complaints of the day are done.
2. In an effort to eat for optimal gut health (more on that soon), I’ve added more fermented foods to my diet. I drink kombucha regularly but recently starting having about a tablespoon of sauerkraut with breakfast. It is an acquired taste so I’m surprised that I like it. My breakfasts lately would seriously make my 7-year-old Life-cereal-eating-self cringe.
3. Please tell me you watched the NCAA Finals game on Monday? To no one’s surprise, I fell asleep with about 5 minutes to go in the game so I missed the seeing the beyond-spectacular ending live. I get chills watching the replays.
4. On the other hand, my dad went to the game in Houston and all I got was this lousy hat. I’ve always wanted to say that. And the hat isn’t really lousy…
5. One more sports topic…UCONN Women’s Basketball. I don’t care if you hate sports, these women are freaking awesome and deserve all the respect. 4 championships in a row. A dynasty.
6. You all know my love of the spiralizer…it’s clear in most of my food posts and recipes (zoodles, coodles and swoodles, duh!). I’ve been wanting to add to my repertoire of spiralized-foods, so this week I made turnip and jicama noodles. Toodles and joodles? Both were surprisingly easy to spiralize (much easier than sweet potatoes) and look almost identical as noodles.
It must have been my first time trying turnips because it was definitely a new-to-me taste. More cabbage-like. I sautéed them with coconut milk, salt and pepper.

The jicama noodles were crunchy, like jicama, obviously. Once softened in the pan they were a really good dinner side and salad topping. Along with sautéing the noodles I made two jicama tortillas/fritters in the Panini press. My fellow health-foodie cousin texted me saying I needed to make these and she was right :) Next time I’ll make them larger so I can actually stuff and top them with things.

7. On a completely different note, I have a half marathon this weekend. I’m an ambassador for the Iron Girl Clearwater Half Marathon and I’m (mostly) ready to run. Okay you know I’m not much of a sportsgirl, but I am with you on the UCONN women’s basketball team because they are amazing and womens basketball is about all I’ll watch! I also LOVE that you spiralized jicama! That’s such a great idea. The only thing I usually do with it is make home fries, which is really good but I want to do more!

Love all your noodles! And love jicama so need to get that at the store next time. Sauerkraut and kimchi were in a lot of my meals last summer so have to do that again as well :)

I just went back to the store today to get more jicama because it came out so well! A good variation for a salad topping too.
I hated breakfast foods as a kid so I ate the most random things like soup and sandwiches. My mom still wanted me to eat breakfast every morning, which I am happy she instilled that habit in me, so even if I wanted something completely random she was good with it. Brie! I was the exact same way! I went through a few months where I heated up Tyson spicy chicken buffalo wings for breakfast without fail, every morning. I was a strange kid.

I LOVE sauerkraut! I just got a big jar of it along with red cabbage….so good. I’ve been having it with brautwurst for dinner this week and I’m obsessed! Hope you learn to like it :)

My family is huuuuge into sauerkraut and even make their own but I’ve never been a fan. I think it’s just the smell that I don’t like? Haha. Oh gosh, breakfast as a kid was always cereal, poptarts or those toaster strudel things.. aka all the sugar haha.

My favorite breakfast as a kid was definitely cereal of mini donut holes. My mom used to have tons of different cereals on deck like Cocoa Pebbles, Fruity Pebbles, Cheerios, and my favorite, Honey Bunches of Oats! I haven’t tried too many fermented foods but I do enjoy sauerkraut on burgers, hot dogs, or sandwiches. Good luck at your half marathon this weekend! You are going to crush it!

And I don’t know much about a vegetti but I totally think you should get a real spiralizer. I got my money’s worth after the first month of using it. It’s a kitchen staple now!
Love that NYT article and it feels so relevant to my life right now. Honestly, up until college (and even to the choosing my major part), I was the definition of a Sprinter. Now, who knows?? I used to live in Connecticut when I was younger and that’s when I started following UConn! I’ve been a fan since the Diana Turasi era.
We have been spiralizing zucchini for spaghetti noodles and we LOVE it!!! Why did it take us this long to discover a spiralizer??

I’m obsessed with the spiralizer! I use it every day. Zucchini is still my favorite but it’s so fun to play around with other vegetables.

Oddly enough, as a kid I rarely ate breakfast – or if I did it was a couple of bites of toast and that was it. I don’t know how I did it as these days I wake up HUNNNNNNNGRRRRRRRRRRRYYYYYYY and breakfast is my favourite meal of the day – so I totally don’t understand non-breakfast eaters :P
I never ever liked cereal though and still don’t – unless it’s on top of yogurt or cottage cheese as soggy cereal is not my jam!

I’ve totally become a spiralizer addict as well! As much as I love using it to increase my veggie intake [zoodles, coodles, boodles, etc] I have really enjoyed sweet potato noodles recently too!

I usually didn’t eat breakfast as a kid, but the times that I did, I loved eggo waffles or cinnamon toast. My mom knew how to make it just right.
I’ve never had saukraut, but my mom hates it, so she’s kind of scared me away from it, lol.
I hope your allergies get better – Claritin never works for me, btu Zyrtec does wonders!
