Happy Super Bowl Weekend! Yes, “happy” and “Super Bowl” definitely go in the same sentence.
Like I said yesterday, I’m going to talk about things other than recipes when I post them. But if you’re here for the recipe, scroll down to the bottom.
Have you heard of the new O.J. Simpson mini-series? It’s called “The People Vs. O.J. Simpson” on FX. I have an odd fascination with the trial and it *might* be because the Kardashians are connected to it. Actually, Selma Blair plays Kris Jenner and there was even a scene in the first episode with her saying “Khloe, be quiet!”
My parents and I watched the premiere together on Wednesday (it airs on Tuesday but we taped it). I wasn’t born yet when it happened but my parents said the car chase was a “where were you when” type of moment. They were living in Oklahoma (random) watching a New York Knicks basketball game and the game was interrupted.
It got me thinking about other “where were you when” moments. Obviously there are many, often horrific, world events that still give me goosebumps to think about, but the moments I remember most vividly (other than 9/11) are all related to sports. Besides when Kanye interrupted Taylor Swift…that I will never forget for some reason. Very regularly I quiz my dad and ask “do you remember where we were when _____ happened?” He’ll roll his eyes and say no before I finish asking the question.
Which brings me back to the Super Bowl. I remember every game since like 2003 (when I started paying attention to life) but every few years there’s one that sticks out for some reason, related to the play on the field or not.. Whether it’s Janet Jackson’s nip-slip, Beyoncé causing a power outage or last year’s crazy/dumb interception in the end zone, this game brings out the big guns. Watch for the commercials if you want, but stick around for the play-by-play.

If you need a game-break, make your family and friends jealous (and kind of confused) by drinking this beet and coconut smoothie instead of wings. Go ahead, be the smoothie in a world full of beer.


- 1/2 package of Love Beets
- 1 cup of coconut water
- 1 tbsp of coconut butter (I used Artisana)
- 1/2 frozen banana
- 3-5 frozen strawberries
- Ice (if needed)
- Pour coconut water in blender first, then add frozen fruit. Blend.
- Add beets and coconut butter. Blend.
- Serve and enjoy.

It’s weird, but I will always remember what I was doing when I heard that Michael Jackson had died. I found out through Facebook and I thought it was such a sign of the times since so much breaking news is found out through FB now a days. Loving this recipe by the way — pinned since I need to try adding beets to my smoothies!

Wooowzers. Love everything here. I don’t really like coconut water, unless it is in a smoothie or something like that, so this is rocking my world, because I ADORE beets. For our generation, I think 9/11 is the ultimate “where were you” moment. As well as the Millennium, Michael Jackson’s death, Princess Diana. So many huge moments in culture and the world.

Yay for another beet fan! It’s a hit or miss for some people (even though, gosh, that color!). I remember Michael Jackson’s death, but not Diana’s (I was 3).

This is so cute! I love that the beets come packaged too. Last time I cut beets, it looked like a scene from Dexter in my kitchen haha. I’m not too big into football so I usually just watch the Super Bowl for the commercials and the delicious food :)

That’s exactly how my kitchen looked too! Not a problem with Love Beets. Because I like the game AND the commercials I find it hard to take bathroom breaks because I don’t want to miss anything haha
Anything coconut is amazing in my book. And I actually really love beets too, but I’ve never had the two combined! Looks yummy. Totally remember Janet Jackson’s nip slip hahahaha I always remember the half time shows and commercials more than the games…don’t hate me ;)

I was in 4th grade when Janet performed and I remember people talking about it the next day like it was THE most scandalous thing in the entire world.
Soooo I’m not a huge beets person–I want to be but I really don’t like them. HOWEVER, I have had beet+strawberries in a smoothie before and it’s actually pretty tasty. Pinning!
Yeah I know they are a hit or miss for some people. I honestly don’t think I’d like it with just beets (it’s a strong taste to drink plain) but with the berries and coconut water I love it!
Hahah Kanye interrupting Taylor was so tragic. I faked being sick at work on a Sunday night so I could go home and watch the VMAs… woops:) I want to start watching the OJ series because I also love trial-type/crime shows.

If you like beets, give it a try! The berries and coconut water dilute the taste a bit so it’s not as strong as beets plain.
I have the first episode DVRed of the OJ show, but I have not actually watched it yet! I’m obsessed with all things “trial” like Serial and Making a Murderer, so this one is right up my alley. I’ll report back when I have watched it because I’m always looking for someone to conspirarize with!

i love anything coconut, so i’m definitely on board with this recipe. beets would be a close second in love and the pinkish hue it gives to the smoothie is rather adorable.

Other than 9/11, I think the biggest where-were-you moment was the Boston Marathon bombing. It was the last day of my internship and we got let out early, so I took a nap before our end of tax season party. I woke up to a text from Michael asking if I had seen what happened. I assumed someone had had a heart attack or something, until I turned out the news. It was very surreal.
