This isn’t one of those “I’m single but I’m going to love myself this Valentine’s Day” post. I did that last year and it still holds true, if you’re curious. Inspired by my friend Christina, I’ve decided to celebrate a little differently this year. Instead of talking about how I’m not in a relationship, I want to briefly share a love story (and relationship) that inspires me to this day.
My paternal grandparents met in high school Spanish class. She was Catholic, he was Jewish. She lived in the poorer neighborhood of town, he lived in the wealthier. Their families disapproved of their relationship for years, even trying to set them up with different people. They were young and in love. Side note: The song “Love Like Crazy” reminds me think of them.
At age 21 they eloped, on April Fool’s Day nonetheless, and kept the marriage a secret for months. I don’t remember the exact details but I know when both families finally found out, they were mad for a long time. It was a big deal to marry out of class and religion “back in the stone age,” as they would say. Safe to say they defied the odds…Five children, seven grandchildren and almost 63 (!!) years later, they are still attached at the hip. They are each other’s best friend and it makes me smile every time I see them hold hands.
I’m going to need my parents to elaborate on their own story when they tell my kids one day. But really, all love, no matter how it began, is special in its own way.
However, if you can’t have a sweet story this year, at least have this chocolate beet bite. Kind of the same, right? Humor me. I snuck in some beets, courtesy of Love Beets, to make a healthyish Valentine treat that everyone will love. No baking required and very easy to modify if needed. If you can’t fall in love, fall in food…specifically chocolate.
- 1 small cooked beet (I used Love Beets pre-cooked beets)
- 1/2 cup of GF rolled oats
- 1/2 cup of nut butter (I used NuttZo Chocolate Power Fuel)
- 2 pitted dates
- 1/4 cup of honey
- 1 tsp of chia seeds
- 1 tsp cocoa powder
- Coconut flakes (for topping)
- Mix all ingredients (minus coconut flakes) in a food processor until blended.
- Roll into small balls and top with coconut flakes.
- Store in refrigerator.
- Optional: chill mixture after blending and before rolling
