WIAW: Easter Eats

I really don’t like using the word “eats” to describe my food, but I couldn’t pass up the chance for an alliterative title. I’m a sucker for those…

I delayed breakfast until after sunrise service. Luckily my Easter basket had some goodies to make the breakfast wait worthwhile. I had…wait for it…oatmeal with fruit. One day I’m going to throw you all off and have eggs or toast. I mixed both bowls with Wild Friend’s Maple Sunflower Butter.

Plus some watermelon because 1) it’s my favorite, 2) I wanted it, and 3) I wanted it.

I had a handful of almonds and some grapes (un-pictured) while sitting by the pool. Rough life ;)

Lunch was a big salad bowl of my current favorite combo: mixed greens + avocado + baby carrots + nuts/seeds + deli turkey + leftover vegetables + dressing. I added quinoa (cooked in coconut milk) on Monday’s salad. So good!

Later, I had an Almond + Coconut KIND bar. I think this will forever be in my top 3 favorite flavors.

Dinner was really good. I had a craving for steak but didn’t make it for a few (lame) reasons… 1) I didn’t want to stink up my small apartment. Even when I light candles and use the vent while cooking, smells really linger around the apartment. 2) I didn’t have any steak to cook. That’s a valid excuse, I guess. I should have thought ahead and purchased some the day before. All grocery stores around me were closed on Easter!

I DID have salmon, which is always a win in my book. Honey-rosemary salmon + roasted cauliflower with turmeric + roasted sweet potatoes. The sweet potatoes came out really good…I used coconut oil, rosemary, cinnamon and salt.

And I finished my jar of TJ’s almond butter. Sigh. Along with not one, but two apples…they were small, I promise.

What did you eat on Easter/Passover? 
Important question: how do you make your sweet potatoes? With cinnamon? Garlic? Salt? Other? I love adding rosemary!

    I always eat my sweet potatoes with brown sugar, salt, pepper and olive oil! :)

      YUM! I don’t think I’ve made them with brown sugar but everyone has suggested that!

    I bet grated apple slices (granny smith) would be a fabulous addition to your lunch salad :)

      You’re so right! I love that I can add pretty much anything to the salad and it would taste great :)

      All of the Wild Friend nut butters I’ve tried have been really good! This one is creamier than Justin’s Maple Almond Butter (which I still love!)

    I love topping my sweet potato with BBQ sauce, but sometimes I mash it up and add almond milk, cinnamon, and stevia. Yum! Now I am craving a sweet potato :)

    I need to try that maple sunflower butter, yum! I also kind of hate the word “eats” and try not to use it much, although I do hashtag it on instagram :)

      This sunflower butter is a bit pricey but they sell them for cheaper online!

    Alliterations are my favorite, and I am not gonna lie, I totally enjoyed your title. So it was definitely worth it!

    I have never had sunflower butter, and it makes me nervous to try, but then I think of how much I love maple almond butter. I think I need to give it a chance.

    Weird fact about me: I have never had watermelon. Don’t know why, it’s just never happened!

      I was oddly nervous to try any other nut butter besides peanut butter. But now I’m HOOKED! Ah, this summer try watermelon. You’ll thank me later :)

    Aside from your meats (I’m vegetarian). that all sounded delicious. I’m not a fan of cauliflower but we’re on the same page with repititious breakfast meals. I was on an egg white kick with slice of whole grain toast and some fruit. HOWEVER, this seemed to change yesterday. I got a hankering for toast with peanut butter sliced bananas and a drizzle of honey with a dash of peanut butter. I am in HEAVEN while munching on this! For a celiac I’d say gluten free bread is of course your best option but sweet jesus it is delicious!

      I didn’t like cauliflower until recently. I’m still not 100% sold on cauliflower rice but with a lot of sauce/spice it’s not too bad. PB & banana is a such a classic combo. I don’t think I’ve had both with honey but it sounds like a perfect meal at any time of the day.

    Still so jelly of your Easter basket :)

    Easter was my first time eating meat since the beginning of Lent! My cousin is an RD and warned me that I might get a stomach ache, but I was all good! 8) I had a meatball, some pork, and a few pieces of kielbasa .. plus gnocchis, asparagus, and a coconut cake made with raspberry jam. It was all gluten free – you’d approve! :)

      I never would think of meat causing a stomachache but you’re right- after not eating it (or anything!) for a long time we’re bound to have some reaction. Glad you had that warning! I TOTALLY approve of your dinner. Invite me next time!

      I think rosemary is my all-time favorite spice. My mom cooks with it often so it reminds me of home :) Yes you do need that sun butter. Treat yourself Thursday?

    Oh my goodness, quinoa cooked in coconut milk – I think you should be the one to cook after our race together, haha! I love that maple sunflower butter as well – yum!

    The almond coconut KIND bar was the first flavor I ever tried back in high school – it’s a throwback! Still one my favorites, till this day! Let’s be dinner twins sometime because that salmon + sweet potato + turmeric cauli is right up my alley!

      Haha I was proud of my little cooking creativity :) Almond + Coconut was one of the first KIND bars I had too, along with the plain Fruit & Nut bar. Fun fact: almond & coconut is still one of the highest sellers!

    Salmon and potatoes…classic ;) Really I just go lazy with my potatoes in the microwave then with coconut butter and cinnamon. If I want white potatoes, I microwave those too and then cut them open like a sweet potato, pour in some ketchup and top with DILL!

      Most of the I’m lazy and microwave them with coconut oil and cinnamon, too! Honestly sometimes I prefer that.

    Salmon and sweet potato is seriously THE BEST combo. Well, after PB + chocolate I suppose. ;) Honestly, I am obsessed with plain sweet potato baked in the oven. I should probably get around to trying it with cinnamon since I hear so many people talk about it!

      Totally agree with you on those combos…I have them both frequently! I also like putting a little coconut oil on a hot sweet potato. It melts right in.

    I’m not a huge nut butter fan, but mixing it into oatmeal sounds really good! I try to be good now and eat my sweet potatoes plain, but I do like to indulge sometimes and use brown sugar.

      I like plain oatmeal so I can add in my own flavors (like nut butter). You have to try it!

    We do Easter brunch after church so I had a delicious plate of ham, scrambled eggs with spinach, roasted sweet potatoes with cinnamon, cinnamon bread, and fruit!

    I am so jealous of your jars of Wild Friends!! I have never tried any of those flavors but I am in love with their honey pretzel peanut butter.

      Honey Pretzel is the only flavor I can’t have because it’s not GF. But I can imagine it’s delicious…all of their flavors are! Your brunch sounded amazing :)
