I feel like I earned this weekend, if that makes sense. The end of the semester is no joke! It’s also so nice of professors to pile on last-minute assignments :)
Anyway, a long week is almost over (one more commitment tomorrow). The sun is shining. I’m less than two weeks away from a long-weekend at home. I’m deciding to focus on the good. Starting with what I’ve been loving this week.

Friday Favorites
1. Cashew butter. I blame Georgie for this one. Yes, another nut butter to add to my list. I thought I was being smart by buying sample packets to test out before getting an entire jar. Nope, not smart. I flew through 5 packets in a week and it would have been cheaper to get the jar. I finally ordered one through Vitacost this week so it should arrive soon.

3. Snail mail. Nothing makes me happier than receiving something in the mail EXCEPT for sending something in the mail to a loved one. This week I sent a small care package to my friends and mailed a few cards to family members. There’s something so personal about taking the time to write, seal, stamp and send a card.
4. (Big) salads. I’ve been on a salad kick this semester. I go in phases with lunches (last semester? The “wrap” phase) and I think the warmer weather has me wanting a change. Also, eating out of mixing bowls/empty containers is my new normal. Fancy, I know.
5. Cooking with coconut milk. I’ve made quinoa with chicken broth, vegetable broth and coconut water before but this week I experimented with coconut milk. Winner winner over here. I used 1/2 cup of coconut water and 1 1/2 cups of water (with 1 cup of uncooked quinoa) and it added an awesome flavor. I added it to salads and had it as a side with dinner. Basically, I love everything coconut now.

I love cooking rice in different kinds of broth. I really like coconut anything, but my BF doesn’t like it at all so I don’t cook with it much. That would be amazing though! Might have to try it out for myself some time :)
Earlier this week I actually sent some mail. I’m doing a tea swap in the Healthy Living Blogs group and I sent it out to my person! Excited to see what kind I get :)
My dad claims he doesn’t like coconut that much but my mom always tricks him and cooks with it :) Oooh hope you like what you get! That’s a fun swap.
I LOVE that cashew butter. It’s so rich and creamy and fabulous (but isn’t that just nut butter in general?). And I totally relate to that Thought Catalog article, too! My outfits are largely just variations of the same thing. Oh well, it works! Have a great weekend and good luck with the end of your semester!

I love all nut butters-cashew included. I’ve also really been loving cashew milk because it’s just a little creamier than almond. Snail mail is the best!

YES! Coconut milk! Isn’t it great! I love the recipes I’ve made with it so far!
AND make your own cashew butter! SOOO easy and sooo yummy! It was the first nut butter I made!

The assignments have been piling up for me cos it’s the end of my semester too! Can’t wait till its done :) I am loving peanut butter lately, I have never tried cashew butter though! That kind of thing is really hard to find down under!

This week really took it out of me. Not because I was crazy busy, but it just went by sooooo slowly. The struggle is real. Luckily we’re almost done! And I can completely relate to that fashion article (as you can probably guess). I literally look in my closet and pick out one of my several pairs of the same jeans and pick which color of the same shirt to wear with them half the time haha I need a personal shopper!

I pretty much gravitate toward the same type/color/style of clothes. I asked my sister to be my personal shopper last summer and I wasn’t the easiest customer.
I LOVE snail mail. I try to send out real letters to my friends throughout the year hoping that they’ll get the hint, but the only one who ever does is my mom! She’s still going strong with birthday cards, anniversary cards, Easter cards… (she goes through a lot of stamps)! Happy Friday and Happy Favorites :)

Same here! My mom and grandmother are the only ones who send me snail mail, but I don’t mind. I’ve saved tons of random holiday and “just because” cards from them :)
That fashion article totally describes me! My hair routine is shower at night and let it dry while I sleep. In the summertime, I live in running shorts and casual shirts. I just can’t justify giving up sleep or money to put in any more effort!

I typically shower in the morning and throw my hair in a wet bun for class (bad for hair care, I know). My professor did a double take the one day I straightened my hair. Oops…
I still have yet to try cashew butter! I think I have put off trying out because I know I will get addicted to it and it will be yet another nut butter I have to buy weekly.
