No Words, Just Food

05/27/15 | Celiac, Food, Gluten free, Link-up

I lied…there will be words.

In the almost three weeks that I’ve been home I haven’t taken many pictures of food. Oddly enough, I’ve had some of the best meals and they all deserved photographs. Not like I would have taken good photos anyway…

In other news, there’s something about having a fully stocked fridge (or the ability to buy lots of food via mom’s credit card) that makes me so happy. One of the many perks of living at home for a bit ;)

Thanks, Jenn!

No pictures of snacks but I can assure you that a lot of nut butter was consumed.

Breakfasts lately have overnight oats or *shocker* regular ol’ oatmeal. One day is one version, the next day is the next. Monday was overnight oats with chia seeds, almond milk, sunflower butter and strawberries.

WIAW food

Lunches are typically “everything but the kitchen sink” salads. Mixed greens, protein, nuts/seeds, avocado, vegetables and any leftovers from dinner. Leftovers are the best, right?! Leftover salmon is like winning the lottery. Kinda, not really.

And yes, even though I’m home I still eat out of ugly plastic mixing bowls. This was actually an empty fruit bowl container from last week. Recycle, folks.

WIAW food

For dinner on Monday I went out to eat with my family, including my grandfather who was in town for my sister’s graduation. I had a steak salad with grilled asparagus, tomatoes, arugula and I asked for avocado. I was shocked that this meal didn’t naturally come with avocado. Avocado obviously makes everything 10x better.

Other notable meals have included: Roasted turkey with potatoes, zoodles (duh), honey-ginger chicken, fro-yo, SUSHI, roasted sweet potatoes, grilled veggies (summer grilling >>>) and enough watermelon to sink a battleship.

The next food round-up will be filled with NYC meals. To say I’m excited is an understatement.

What is your favorite summer fruit?
What food instantly makes a meal better? Avocado for me. It goes with everything.

I tried them for the first time two weeks ago! I still want to try other variations but I’ve been doing 1/2 cup of rolled oats + 1 cup of vanilla almond milk + chia seeds + cinnamon + nut butter and add berries in the morning.

    AHHHH NYC! <—clearly I'm excited too :D
I've been loving oats with strawberries lately. Strawberries in season are about 1000x times better <3

I eat so many but I read somewhere that they are good for your teeth? I’m going with that…We need to meet this summer. End of story.

If I am at a restaurant and see a meal with avocado, chances are I will order it. It really does make everything better and to think that just a few years ago I hated avocados! Haha. I am so excited for your move to NYC for the summer & to see all of your eats in the city!!

Same here! I eat at least a full avocado a day. I get mad when they aren’t ripe!

I haven’t had raspberries in a while and now I want them. Ah I can’t get on the Brussels train. But we can still be friends :)

Yeah I’m not too sure why I asked that question because there are so many delicious summer fruits. Watermelon obviously tops my list.

Yes x100 for nut butters. My mom put peaches in our salad a few days ago and I loved that. I do like biting into a peach but cut up in salads prevents me from making a mess of the juice haha

I know what you mean about the shock. Tons more food options (and storage space) than I am used to at school. My mom makes a good mango salsa that we put on top of chicken or fish. SO good.

We’ve been trying to think of more ways to incorporate veggies, and grilling them sounds delicious. I will have to make sure a grill is on the “must” buy list when we move into our house!

I miss having access to a grill when I’m not at school (not like I would know how to grill anyway haha). It’s the epitome of a summer dinner!

I don’t like having salads the “normal way” now! Whatever that is…
