Now that marathon training is over I’ve had more energy and time to spend in the kitchen. Not that I necessarily want to spend more time in the kitchen, but it has given me a little extra wiggle room to experiment with meals. This week I’ve been reverting away from “throw the chicken in the oven and sweet potato in the microwave” and that has resulted in delicious dinners.
-Quinoa, chicken and vegetable stir fry. Made with ginger and liquid aminos. The chopsticks lasted for 2 minutes….
Salmon on repeat. While it’s more money, I really love salmon so I think it’s worth the cost.
-Baked salmon with lemon, rosemary and coconut oil, sweet potato fries and roasted broccoli.
-Salmon (same as above), sweet potato fries and spinach and tomatoes sautéed in coconut oil.
-Honey mustard chicken, sweet potato (ok, I microwaved here) and zucchini noodles with 1/2 avocado.
Even though dinners have been more creative for me, I’ve kept to my usual (but favorite) oatmeal and turkey wraps for lunch. Most of my snacks have consisted of these little bad boys that I rolled together on Saturday. Almond butter, cinnamon, rolled oats and honey.
Hoping for some yummy meals when I’m away next week for Thanksgiving break!
I think it’s safe to say your on both a salmon & sweet potato kick, huh? :) Go dinner consists of chicken with some type of vegetable & carb on the side.

Guilty ;) Protein + vegetable + carb is the best format for a simple, healthy meal.
Haha, I love chop sticks! I bought this fancy pack of them last year and love using them for my asian meals! I’m pretty good with them, but then when you get to the last bits of food…you need a fork to get all the goodness out of the bowl!

Ha i would make a mess eating with chopsticks.I don’t blame you. I am a big fan of tortellini for dinner (requires nothing but boiling water) or grilled chicken salads with the chicken pre-cooked from trader joe’s. I’m basically the next Food Network Star if you can’t tell ;)

I spilled so much quinoa trying to make it from the bowl to my mouth. Not worth it! And don’t worry, 90% of my meals involve the microwave and oven with minimal prep.
I haven’t had salmon in forever and I miss it! Your meals all look so yummy! And those chopsticks would have lasted just the amount of time to take the picture for me. I can never learn how to use them!!

All your eats look so good! I always use spaghetti squash as a substitute for pasta, but your zucchini noodles look great too. What do you use to make the zucchini spiral like that?
Also – your snack bites sound soooo good! What a quick and easy go-to snack. I am always looking for new ideas.
I love spaghetti squash! My roommate as a spiralizer so I use that. It’s so easy and you can use it with basically every vegetable. Definitely try it! I just finished the last of my snack bites and already want more.
I’m having salmon for the first time in a while and can’t wait. I’m also having mashed sweet potatoes-yum!

My go to dinner lately has been baked chicken and mashed sweet potatoes. It’s the ultimate lazy meal because I can make big batches on the weekend and reheat throughout the week. I’m usually about ready to gnaw off my own arm when I get home from work, so it helps to have healthy choices ready to go. Your energy balls look really good!

I try to make a big batch of dinner a few times a week for exactly the reason you gave. I’m starving by the time I get home from work/class and would resort to oatmeal most days if I didn’t have anything ready!

So much sweet potato love :) :) My go-to dinners are also salmon/tilapia, sweet potato and something green. Easy, healthy, delicious! Otherwise I’d have to say an omelette or some type of eggs. I haven’t branched out too much lately — I’m all about easy! =)
