I don’t know how many WIAW’s I will take part in because, frankly, I don’t always have the patience to make my plate look pretty and take the perfect photo (I hope to get better at it, though!). But I thought it would be cool to show what I ate this past Monday because my last few days have consisted of random, make-shift meals that involved only the microwave. I’ve been on-the-go and haven’t had any time to cook or plan meals but I still managed to eat healthy. What I ate would be doable for anyone living in a dorm (with a microwave and access to a grocery store). Thanks, Jenn for the link-up!
Breakfast: 2 bowls of gluten-free oatmeal with peanut butter and fruit
Snack: Apple and almonds
Lunch: Turkey wrap. Deli turkey on a gluten-free tortilla with lettuce and honey mustard
Snack: KIND bar
Dinner: Chicken thighs, sweet potato (microwaved), raw zucchini noodles with 1/2 avocado. Okay, here is where I “cheat” a little with dorm-room dining.. I still have some of the chicken my mom froze for me before I left, so I heated that up.
Snack: Apple and peanut butter…by the spoonful :)
So maybe I didn’t have too many vegetables but I still ate pretty well-balanced meals without actually cooking. I will have to get back in the kitchen soon as I only have one piece of chicken left, but I think I figured out which days I can cook based on my work and class schedule. There’s always Whole Foods hot bar for dinner…but the next thing I need to master is sticking to a grocery budget. Not something I’m good at.

What was/is your favorite food in college? Apples and peanut butter. My favorite foods for the last 10+ years.

I’ve been loving apples and almond butter! It’s my go-to favorite! :) But all of these are inspiring me for some new creations in my apartment kitchen. I can’t wait to continue eating healthy in college! :)
Kind bars are my go to as well. They have some in the granola bar section that aren’t as expensive. They are squares. My favorite has been maple and pumpkin seed!
Vegetables or not, your meals look delicious!! I too have been lacking on veggies since our fridge is quite empty seeing how we leave for vacation on Friday. I refuse to restock beforehand. Haha!
