Yes, you read that title right…I finally cooked. I took a “hiatus” from cooking for myself over break but I got a very random urge to make dinner for my family last week. It was nice having more supplies, space and ingredients than I’m used to in my apartment kitchen. I might have said I actually enjoyed cooking…but don’t hold me accountable for that.
I made Inspiralized’s Basil Pomodoro Zucchini Pasta with Chicken. It was delicious and very easy to make (two things that are mandatory about the recipes I use).
I followed the recipe almost exactly, but I added some homemade pesto and topped it with avocado. This is definitely something I will make when I return to school and I’m excited to try out more of her recipes.
And for a more of the WIAW party, here are other food highlights from the last week.
Another spiralized bowl inspired by this recipe! This one I’ll give the credit to my mom (although I did make the quinoa).
Carrot noodles + cucumber noodles + quinoa + avocado + salmon sashimi
I substituted the carrot noodles for zucchini noodles for a delicious lunch the following day.
My parents got a gift card to a fancy and $$$ restaurant in Tampa called Bern’s Steakhouse so we went there for a special dinner. The picture is horrible quality but it’s a somewhat famous restaurant so I wanted proof that I was there. The steak was incredible.
Filet mignon + broccoli +carrots + onion rings

Nothing like finishing a jar of peanut butter (*knowing there is a backup in the pantry).
I just got a Veggiti for a wedding gift and I am super excited to start making noodles from EVERYTHING! All your food looks really good!

I love my sprializer! I’ve only ever made zoodles out of it though! I want to try it with carrots and other veggies!

Now I really want a spiralizer! I I have seen so many good ideas for using them and I would love to make that zucchini pasta!

Oo the spiralized veggies looks so good – definitely gotta invest in a spiralizer! Also that sashimi looks amazing. Love love salmon.
One of the fancier restaurants my sister and I went to was an all raw vegan place in NYC. It was incredible! We also ate outside on their adorable patio.

Ooh lala :) We’re on the same wavelength, girl — I just had spiralized zucchini with pesto last night! :) I can’t wait to see what else spiralizes well .. like you said, carrots and cucumbers.. I also want to try beets and apples! :)

Spiralizing is my jam! But for real girl, if you haven’t spiralized a beet yet, GET TO IT! It will change your life!

I just might have to now! I rarely have beets except for when I’m at the Whole Foods salad bar.
I love my spiralizer and even got my bf on board with zoodles. Totally pinning that first recipe and DROOLING over that salmon sashimi-yum!

I’ve never used a spiralizer, but those noodles look really good! I almost never go out to eat, let alone go out somewhere fancy. I think the fanciest dinners I’ve had have been at weddings.
